I just stopped over at www.GreatAmericanSeafoodCookOff.com and found a great opportunity. The folks over there are having a cook off going on where they are selecting the best recipe and best cook. There are presently five recipes on display to choose from. You can simply choose which one you like the best, vote for it and voila, you are automatically entered into the contest where you get the chance to win a trip to New Orleans! Cool, isn’t it?
As for myself, my favorite recipe is the Colorado Striped Bass Panzanella by Chef Paul Anders. This recipe belongs to Colorado. The ingredients are Farmer’s Market Tomatoes and Cucumbers, Mint, Basil, Olives, Ciabatta Bread, Crispy Eggplant, Aged Balsamic Vinegar, and Tuscan Olive Oil. I think this recipe is the best because it contains striped bass, which I love. But I would do a couple of things to alter the recipe. Instead of mint, I would use coriander leaves. Also, I would use a bit of garlic. I just lova lova lova garlic!
The best thing I liked about this recipe is that is uses domestic seafood, which is sustainable. It’s fresh, it’s local, and it has a great taste – what more can you ask for? Moreover, sustainable fishing practices not only benefit fishing communities but also ensure the long term health of marine resources.
